Spinach
The ingredient
Spinach leaves are dark green and smooth or slightly crinkled. When raw, they have a mild, slightly earthy flavor that becomes more pronounced when cooked. Spinach is high in iron and vitamins and is popular in many Indian dishes.
The benefits
In Ayurveda, spinach is considered cooling, which makes it effective in balancing pitta (fire and water) dosha (energy or substance). It is also beneficial for kapha (earth and water) because it is light and does not increase mucus production. Some research studies have supported possible benefits of spinach including:
- Helps to moderate blood pressure
- Contains lutein, which is good for eye health
- High in antioxidants, vitamins and minerals
