Curry leaves are small, shiny, and dark green, with a distinct, pungent aroma. They offer a unique flavor that is slightly citrusy with notes of anise. Curry leaves are not only culinary staples in South Indian cooking but are also believed to have health benefits such as aiding digestion.

Curry leaves are valued in Ayurveda for their ability to balance all three doshas—vata (air and space), pitta (fire and water), and kapha (earth and water).
