Bell Peppers
The ingredient
Bell peppers, also called capsicums, come in various colors, including red, yellow, orange, and green. They are crunchy, juicy, and have a mildly sweet flavor. Bell peppers are unique in that their nutritional content, especially vitamin C, increases as they ripen and change color.
The benefits
In Ayurveda, bell peppers help balance the kapha (earth and water) dosha (energy or substance) due to their “light” and “drying” qualities. They are also used to stimulate the agni (digestive fire) without aggravating pitta (fire and water). Some research studies have supported possible benefits of bell peppers including:
- Promotes eye health due to high levels of beta-carotene
- High in vitamin C, supporting immune health
- Contains antioxidants
